Introduction

Using Squash leftovers we created really good "hashbrowns" to have with breakfast Using Squash leftovers we created really good "hashbrowns" to have with breakfast
Number of Servings: 4

Ingredients

    3 cups cooked Squash - any winter squash will do
    1 Tblsp Olive Oil
    1/2 Tblsp Butter

Directions

Heat skillet on medium heat. Add olive oil and butter.

Add squash and flatten with spatula. Cook on medium heat for 10 minutes or until edges are crispy, brown.

Turn squash over and cook for another 10 minutes or until brown.

Serves 4
