Creamy spiced sweet potatoes

Oh so good and low on carbs and easy to make! Oh so good and low on carbs and easy to make!Number of Servings: 6
Ingredients

2 large sweet potatoes, scrubbed clean
2 Tbsp butter
2 Tbsp low-fat cream cheese, room temp
1/4 cup 1% milk, hot
2 tsp ground cinnamon
Directions
1. Preheat oven to 400-degrees. Put potatoes on foil-lined cookie sheet (potatoes may ooze while baking)
2. Bake for 50-60 min OR
Poke potatoes with fork, cook in microwave on "baked potato" setting
3. Let cool about 20-30 minutes, until cool enough to handle
4. Scoop potato flesh out of skins and put in blender, food processor or bowl.
5. Add butter, cream cheese and hot milk. Blend in blender, food processor, with hand-held mixture or mash with potato masher.
6. Add cinnamon and mix well. Enjoy!
*Trying adding a little more cream cheese for a creamier version. If the people in your life don't care for sweet potatoes as much as you do, you can also mix in some regular mashed potatoes, or add the whipped sweet potatoes as a large garnish on top of mashed potatoes.
