1 oz salt pork
1/2 oz butter
8 oz onion
4 oz celery
2 oz carrots
2 garlic cloves, minced
1/2 oz flour
48 oz Tomatoes, peeled/seeded/diced
4 oz Tomatoe puree
2 oz white veal or beef stock
4 oz pork bones, roasted
1 tsp salt
1/8 tsp White pepper
1 pinch sugar
1/2 tsp freah thyme
1 bay leaf
Cook salt pork in butter until fat is rendered and it bgin to crisp.(3 min)
Add next 4 ingrdients and sweat in oil til onions translucent.
Add flour. stir well and cook for about 3 min.
Combine diced tomatoes, puree,& stock.
Slowly add to pan whisking to blend, bring to a simmer.
Add pork bones & seasoning, simmer 1-2 hours til flavorful.
Remove bones & bay leaf.
Puree until smooth, season to taste.
