Baked Zucchini Chips

Introduction

A quick healthy way to enjoy zucchini from your garden or local farmer's market. Easy and delicious! A quick healthy way to enjoy zucchini from your garden or local farmer's market. Easy and delicious!
Number of Servings: 4

Ingredients

    2 Tbsp Grate Parmesan Cheese
    1/2 cup Italian Style Bread Crumbs
    2 Egg Whites (lightly whisked)
    1/8 tsp black pepper (if desired)
    2 Zucchini Squash (sliced)

Directions

1. Prepare baking sheet with nonstick aluminum foil or spray a baking sheet with Pam. Preheat oven to 475 degrees.

2. Combine Parmesan & Bread Crumbs (and black pepper, if desired)

3. In separate dish, whisk 2 egg whites.

4. Dip Zucchini slices in egg white and then in bread crumb mixture - won't be completely covered - and set on baking sheet.

5. Bake 5 minutes and then turn over and bake another 10-15 minutes. Enjoy while hot!!

Serving Size: 4 servings (1/2 zucchini each)
