Rolled Oatsand Rice Pudding

Introduction

Number of Servings: 6

Ingredients

    Milk, nonfat, 1.5 cup (remove)
    Granulated Sugar, .25 cup (remove)
    Egg Yolk, 3 large (remove)
    *White Rice, medium grain- cooked, 1 cup (remove)
    *Quaker Oats - Quick 1 Minute - Dry, 1 cup (remove)
    Walnuts, 1 cup, chopped (remove)
    Butter, unsalted, 1 tbsp (remove)
    Granulated Sugar, .25 cup (remove)
    Vanilla Extract, 1 tbsp (remove)
    Nutmeg, ground, 1 tsp (remove)
    Cinnamon, ground, 1 tsp (remove)
    Dates, .25 cup, pitted, chopped (remove)

Directions

Heat milk over med. heat. Whisk egg yolks with sugar. Temper egg mixture with a splash of the heated milk before adding egg to saucepan. stir until thickens. Add rice, and oats and cook stirring frequently until it thickens a bit. Meanwhile, toast walnuts in a tsp of butter, coat with sugar and cinnimon, then allow to cool. Take saucepan from heat, add dates, vanilla extract and nutmeg. Top with walnuts and enjoy!
