Thrifty me saw a smoked turkey drumstick at the store. I thought it a great way to flavor bean and lentil soup! I won't eat the turkey, though someone in my family will. The rest of us can enjoy the smokey flavor while eating the fiber rich beans and lentils. It really is a meal in a bowl! Thrifty me saw a smoked turkey drumstick at the store. Ingredients

    Turkey drumstick (leg), smoked, 22 oz with bone, cooked (yield after b (remove)
    Onions, raw, 1 cup, chopped (remove)
    Carrots, raw, .5 cup, chopped (remove)
    Celery, raw, .5 cup, diced (remove)
    Jalapeno Peppers, 1 pepper (remove)
    Water, tap, 3 cup (8 fl oz) (remove)
    Pureed Tomatoes, 1 can (29 oz) (401 x 411) (remove)
    Lentils, 1 cup (remove)
    Chili powder, 1 tbsp (remove)
    Beans, black, 4 cup (remove)

Directions

Sweat the onions, carrot, and celery in a teaspoon of olive oil.
Roast the jalapeno over gas flame carefully! slice it vertically and caefully remove seeds and membranes by scooping with a spoon.
Over lower heat; toss into onion mixture, garlic powder and chili powder to toast spices. Add jalapeno,water, tomatoes, lentils and drumstick. Bring to slight boil then lower heat, cover, and allow to simmer for 1 hour. Add rinsed can of black beans. Serve with low fat sour cream or chopped cilantro. enjoy!
