Pumpkin Penne Casserole

Introduction

I know it's an odd combination, but trust me - this is fantastic! I know it's an odd combination, but trust me - this is fantastic!
Number of Servings: 12

Ingredients

    2 cups Barilla plus penne pasta
    2 # ground turkey 93% lean
    1 medium onion, chopped
    2 cans low fat evaporated milk
    1 (15 oz.) can pure pumpkin
    1 can tomato sauce
    1 TBS packed brown sugar
    1 TBS paprika
    1 TBS Worcestershire sauce
    1 tsp garlic powder
    1/2 tsp black pepper


Directions

Cook pasta to al dente consistency, and drain. Don't rinse.

While pasta is cooking, cook ground turkey and onion in large skillet; drain. Stir in evaporated milk, pumpkin, tomato sauce, sugar, paprika, Worcestershire sauce, garlic powder and black pepper. Then add cooked pasta, and cover.

Cook on medium heat, stirring occasionally, for about 15 minutes, until pasta is thoroughly cooked and casserole has thickened.
