Summer Squash Bread

Ingredients

    1/2 c. oil
    1/2 c, aoplesauce
    3 eggs
    1 3/4 c. sugar
    2 cups grated summer squash
    2 tsp. vanilla
    3 c. flour
    2 T. cinnamon
    1 c. pecans

Directions

Mix oil, applesauce, eggs, and sugar. Stir in grated squash and vanilla. Mix in flour, cinnamon and nuts. Bake in 2 greased loaf pans at 350 degrees for 50 minutes.

Serving Size: Makes 2 loaves, approxmately 16 servings
