Curried Chicken and Broccoli Casserole

Introduction

Oven-baked dinner - can be assembled a day ahead of cooking. Cool broccoli before putting all ingredients together. Cover with plastic and refrigerate until baking time. DELICIOUS DISH! Ingredients

    4 C chopped Broccoli
    1/4 C Water
    1 can (10.75 oz) Healthy request cream of mushroom soup
    1/4 C light mayo
    1 Tbsp lemon juice
    1 Tbsp curry powder
    1/2 tsp salt
    1/2 tsp pepper
    2 boneless, skinless chicken breasts - cut into bite size chunks
    1/2 C shredded reduced fat colby or swiss cheese

Directions

Preheat oven to 350. Coat 13 x 9 baking dish with cooking spray.

Place broccoli in water in large resealable plastic storage bag. Microwave on high power, rotating occasionally, for 3-5 minutes, or until bright green. Drain and set aside.

In small bowl, mix soup, mayo, lemon juice, curry powder, salt and pepper. Stir to mix.

Line prepared baking dish with reserved broccoli. top with the chicken. Cover evenly with the soup mixture. Sprinkle with cheese. Cover and bake for 25 mins. Uncover and bake for additional 15-20 mins, or until golden and bubbly.
