dairy/gluten/egg free corn bread

Introduction

I use either white or yellow corn meal - had to come up with a dairy/wheat/egg free food once I found out that I suffered from these allergies. This corn bread is very good and my kids love it even though they do not have allergies. I have adjusted the amount of gluten free flour so if you want to make this recipe with wheat flour use 1-1/4. The texture may be a little different for you without egg but I love it. So if you want egg add 2 egg whites. But remember any modifications to the recipe need modifications to the Nutritional information! Ingredients

    1 Cup Multi Blend gluten Free Flour
    3/4 Cup Enriched Corn Meal
    1/4 Cup Sugar
    2 tsp baking powder
    1/2 tsp salt
    1 Cup Vanilla flavored Soy Milk (I prefer SILK)
    1/4 Cup Apple Sauce (could use natural but I had type with sugar in it)

Directions

Preheat oven to 400 F. Combine ingredients in order listed and mix until dry ingredients are just moistened. (If your not use to cooking with gluten free flour you may need to add more SILK until you get the desired consistancy) Pour into a greased 8 or 9 inch square pan. Cook 20-25 minutes. Until light golden brown and tooth pick inserted into center comes out clean. Serve warm with your favorite dairy free butter and with syrup or honey. Mmmmm......

Serving Size: makes 9 - 3 inch pieces in 9x9 pan
