Herb Bread

    1/2 c bread flour
    1/2 c whole wheat flour with germ
    1 c whole wheat pastry flour
    3/4 warm water
    2 tsp dry yeast

    1 T oat bran
    1 tsp dried rosemary, crushed
    1/8 tsp garlic salt, scant measurement
    1/8 tsp onion powder
    1/8 tsp dried basil
    1/8 tsp dried oregano

    1 tsp olive oil


Combine flours, water, and yeast in mixer. Mix/knead for 10 minutes until smooth and silky. Place in a bowl sprayed with Pam and cover with a warm, damp cloth until doubled, about 30 to 45 minutes.

Punch down dough and divide into 8 rolls or 2 loaves, if desired. Combine bran and herbs and spices and mix together thoroughly. Brush dough lightly with olive oli. Sprinkle herb mix over tops of bread and press in lightly. Cover with damp towel and let rise again until doubled.

Preheat oven to 375F. Bake on pizza stone or cookie sheets until golden, about 25 minutes for loaves, less for rolls.
