2 tablespoons Vegenaise
2 teaspoons packed brown sugar
1/2 teaspoon apple cider vinegar
2 cups grated carrots
1 medium apple, chopped
1/4 cup walnuts, broken
Variation: You can add raisins, but you will have to count the nutrition separately -- I didn't include them.
(My mom made this all the time -- except she never measured anything -- and of course she used mayo or miracle whip for the Vegenaise.)
