Introduction

Most recipes for egg salad make up enough for 5 or 6 sandwiches. This is a recipe for a small household. I added pimento pepper to add color, flavor and a bit more nutrition. Ingredients

    2 hard boiled eggs
    1.5 tablespoons Hellman's Light Mayonnaise
    .5 tsp Dijon Mustard
    1 Tbsp sweet pickle relish
    2 Tbsp chopped canned pimentos or sweet red peppers

Directions

Blot the peppers dry with a paper towel and chop them fine. Chop the eggs coarsely. Mix together with all other ingredients. Salt and pepper to taste. Serve as a sandwich, on crackers or stuffed in a tomato.

Serving Size: Makes 2-3 1/3 cup servings
