Vegan black bean burritos

Introduction

Ingredients

    1/2 red bell pepper
    1/2 cup diced white onion
    1/2 diced jalepeno pepper
    1 tsp. minced garlic
    1 slice silken soft lite firm tofu
    2 cups canned black beans
    1 tbsp canola oil
    2 tbsp chopped fresh cilantro
    1/2 tsp salt

Directions

Heat 1 tbsp canola oil in large skillet. Saute onion, peppers, garlic, and cilantro. Add tofu and salt and stir continuously for three minutes until creamy. Spoon onto flour tortilla and wrap. May warm in oven for a minute or two.

Serving Size: makes 3 large burritos
