Carrot Cookies

Introduction

A nice soft cookie--figured is was healthier than some cookies due to the carrots in them. A nice soft cookie--figured is was healthier than some cookies due to the carrots in them.
Number of Servings: 36

Ingredients

    3/4 c. sugar
    1 cup shortening
    1 egg
    1 t. vanilla extract
    1 c. mashed cooked carrots
    1/2 t. lemon extract
    2 c. flour
    2 t. baking powder
    1/2 t. salt


Directions

Cream shortening, sugar and egg. Add extracts and carrots. To the creamed mixture add the flour, baking powder and salt. Mix well.

Drop by teaspoon onto cookie sheet. Baker at 350 for about 10-12 minutes or until bottoms are lightly browned.

Ice cookies with powdered sugar, orange extract or lemon extract, and margarine. Make like a glaze and ice while cookies are still warm.

Serving Size: makes 36-48 cookies depending on size
