3/4 c. sugar
1 cup shortening
1 t. vanilla extract
1 c. mashed cooked carrots
1/2 t. lemon extract
2 c. flour
2 t. baking powder
1/2 t. salt
Drop by teaspoon onto cookie sheet. Baker at 350º for about 10-12 minutes or until bottoms are lightly browned.
Ice cookies with powdered sugar, orange extract or lemon extract, and margarine. Make like a glaze and ice while cookies are still warm.
Serving Size: makes 36-48 cookies depending on size
