Ingredients

2 c. uncooked rice
2 onions
3 bell peppers, any color
1 eggplant
2 zucchini
2 t. olive oil
4 cloves garlic
2 tomatoes
1 t. basil
1/2 t. oregano
1 T. parsley
1/2 t. salt
Directions
1. Cook rice according to package directions.
2. Cut onions, peppers, eggplant and zucchini into chunks.
3. Saute onion in oil. Add garlic, then the onions, peppers, eggplant and zucchini chunks.
4. Chop tomatoes into chunks and add to the vegetables.
5. Add spices to the vegetables and cover & simmer 15-20 minutes until tender.
6. Serve over brown rice.
