HCG MEATBALL & TOMATO SOUP

Introduction

My Grandma's Italian recipe modified to fit the HCG diet is a satisfying meal. A nice big hearty bowl of meatballs and cooked tomatoes together for a really fresh yummy meal. Ingredients

    Meatballs:
    3.5 oz 93% Lean Ground beef
    1/4 tsp Garlic powder
    Dash Oregano, ground
    1/8 tsp Salt
    dash Pepper, black
    3 crushed Forno Villaggio Imported Italian Parmesean Crunchy Bread sticks, plain, 10 calories each soaked in
    *Coconut Milk, 1 tbsp (or 10 calories worth of milk or liquid)

    Sauce for Meatballs:
    1/4 cup Onions, raw chopped
    (Fry Onions: I use one drop of olive oil to fry onion until translucent)

    2 cups Red Ripe Tomatoes chopped or sliced
    1/4 tsp Sweet Basil dried or 1 T fresh
    1 tsp minced garlic or .25 tsp garlic powder
    1 dash oregano
    1/8 tsp salt to taste
    dash pepper
    1/8 tsp parsley

Directions

Serving Size: Makes 1 serving
Start sweating onions in small fry pan. Add water if necessary.
Soak breadsticks in coconut milk until mushy.
Add ground beef and spices. Mix well.
Add to cooked onion and fry together until meat is cooked through.
Add chopped tomatoes and rest of spices scraping fried bits off bottom of pan. Cook until desired tenderness of tomatos.
Serve in soup bowl.
