3 beaten eggs
2 cups granulated sugar
3 teaspoons vanilla extract
1 cup oil
2 cups grated zucchini (coarse)
3 cups flour
1 tablespoon salt
1 tablespoon baking soda
3 tablespoons ground cinnamon
1/4 teaspoon baking powder
You can also add one cup raisins.
Bake at 350ºF for one hour, cool, and enjoy!
Serving Size: Around 15 1/2 inch peices, depending on pan.
