Mediterranean Lentil Stew

Introduction

This is tasty and a great source of vegetarian protein and fiber. I like to add extra lemon juice. Good with warm Pita on the side. This is tasty and a great source of vegetarian protein and fiber. I like to add extra lemon juice. Good with warm Pita on the side.
Number of Servings: 6

Ingredients

    1 onion chopped
    1/4 c. olive oil
    2 carrots, diced
    3 stalks of celery, chopped
    2 cloves of garlic, minced
    1 tsp dried oregano
    1 bay leaf
    1 tsp dried basil
    1 14.5 oz. can of diced tomatoes, low salt
    2 c. Red Lentils
    4 c. low sodium vegetable broth
    4 c. water
    1 c. fresh spinach, rinsed and thinly sliced
    1 tbsp lemon juice
    salt and pepper to taste

Directions

in a large soup pot, heat oil over medium heat. Add onions, carrots and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano and basil, cook for 2 minutes, stir in lentils and add water and tomatoes. Bring to a boil, Reduce heat and simmer at least 1 hour.

When ready to serve, stir in spinach and cook until wilted. Remove from heat and stir in lemon juice, as well as salt and pepper to taste.

Serving Size: makes 6 bowls of stew
