Giant Stuffed Zucchini

Ingredients

    1/2 giant zucchini
    12 oz ground bison
    1 med diced onion
    1 diced red bell pepper
    2 cloves diced garlic
    1 thinly sliced large carrot
    3 tbl low fat sour cream
    1 med sliced tomato
    1/4 cup whole wheat panko
    1 tbl olive oil
    seasonings

Directions

scoop out insides of zucchini, spray zucchini with pam and place cut side down in oven for 20 minutes or until slightly tender. Meanwhile saute ingredients up to the sour cream. When soft add sour cream. Pull zucchini from oven, stuff with mixture, bake for about 30 minutes. Place tomato slices on top, sprinkle panko and parmesean cheese, drizzle olive oil and broil for 5 minutes.
