TOH Zucchini Bread

Introduction

I think you could reduce the sugar on this recipe to 1 C and still get good results. I think you could reduce the sugar on this recipe to 1 C and still get good results.
Number of Servings: 32

Ingredients

    1/2 C plus 2 T orange juice
    1/2 C canola oil
    1/2 C unsweetened applesauce
    3 eggs, lightly beaten
    2 tsp vanilla extract
    3 C flour
    1.5 C sugar
    4.5 tsp cinnamon
    1.25 tsp baking powder
    1 tsp salt
    .5 tsp baking soda
    2 C shredded zucchini
    1 C chopped pecans

Directions

Combine wet ingredients. Combine dry ingredients. Add wet ingredients, then fold in zucchini and pecans.

Pour into two 8x4x2 loaf pans, sprayed with PAM. Bake at 350 for 50-60 minutes or until toothpick comes out clean. Cool in pan 10 minutes before removing.


Serving Size: Cut eat loaf into 16 slices. Each slice is about 150 calories.
