Vegetarian stir fry, very filling no need for rice or pasta Vegetarian stir fry, very filling no need for rice or pasta
Number of Servings: 4


    1 fennel bulb
    .5 head napa cabbage
    1 large onion
    1 medium zucchini
    3 stalks celery
    .5 cups organic salsa
    .25 cups coconut cream
    3 tbsp miso concentrate
    1 package organic baked tofu (trader joes)
    2 -3 tbsp oil (i used grapeseed oil)


Dice all veggies and stir fry till tender, mix salsa, miso and coconut cream and add to veggies. add diced tofu and let simmer till desired doneness.

Hint: slice the fennel thinly so it cooks and blends well with the other veggies.

Serving Size: makes 4 very generous portions
