Ingredients

    3 large beets, peeled and grated
    1 Granny Smith apple, grated
    1 tsp fresh ginger, grated
    3 Tbsp sherry vinegar
    1 1/2 Tbsp extra virgin olive oil
    1/2 tsp coarse salt
    1/8 tsp freshly ground pepper

Directions

Mix all the ingredients together and enjoy!

Serving Size: Makes about 7 half-cup servings.
