Herbed Roasted Potatoes

Ingredients

    1 T Extra Virgin Olive Oil
    1 T Granulated garlic
    1 T Parsley flakes
    2 lbs red or white potatoes, scrubbed and cubed.

Directions

Whisk together herbs and olive oil.
Add the potatoes and mix them gently with your hands until well coated with the herbs and oil. Spray a baking sheet with non-stick cooking spray. Spread the potatoes out in a single layer and roast at 400 degrees for 25 minutes, stir, and then cook another 20 minutes, or until tender. Makes about 5-1 c. or 4 oz servings.
