Cucumber Salad

Introduction

Great way to use up summer vegetables from the garden. Great way to use up summer vegetables from the garden.
Number of Servings: 4

Ingredients

    1.5 cup cucumber, chopped
    1 cup cherry or grape tomatoes, halved
    1/2 cup red and green peppers, chopped
    1/4 cup red onion, thinly sliced
    2 tbls Wishbone light italian dressing
    very small pinch of sugar or splenda
    a pinch of cayenne pepper
    a splash of white wine vinegar

Directions

Sprinkle the cucumbers with a little salt and put in a colander to help drain excess water out of them. Let it sit for about 20 minutes, rinse and pat dry. Toss them in the bowl with all other ingredients. Put in the refrigerator for at least an hour to blend all the flavors. Enjoy.
