This great recipe comes from Sheddingit.com and it is superb. We use Manilla mangos. They are small and yellow, have the smallest easiest to remove pits and sweet and creamy. Ingredients

    12 ozs raw shrimp, tails and shell removed and deveined
    1/4 cup lime juice
    2 tsp olive oil
    Salt and pepper
    2 cups diced bell peppers, chopped
    1 cup onion, chopped
    Non stick cooking spray
    3 cloves garlic
    2 mangos, diced
    1 cup spinach
    1 Tbl chopped cilantro
    Dash of Cayenne

Directions

Season shrimp with the lime juice, olive oil, one clove garlic, and salt and pepper. Let them marinate while you dice up the rest of the veggies and the mango Heat a pan and spray it with nonstick spray; add the peppers, onion, and garlic and cook for about five minutes. Then add the mango, cilantro, shrimp, spinach, and red pepper and sauté until the shrimp are cooked through..
