Ground Veggie Chili

Ingredients

1 T extra light olive oil
1 medium green bell pepper, chopped
1/2 medium red onion, chopped
3 cloves garlic, 2 diced, 1 sliced
1 package Yves meatless ground
1 27 oz can low sodium kidney beans
1 15 oz can diced tomatoes
1 8 oz can tomato sauce
1 T chili powder (or to taste)
1 tsp cumin (or to taste)
1 tsp dried thyme (or to taste)
1 T sea salt (or to taste)
1 tsp ground black pepper (or to taste)
Directions
Heat olive oil in a large pot over medium high heat. Add onions, bell pepper, and garlic; saute until onions become translucent. Add meatless ground and spices, stir. Add beans and tomatoes, stir. Bring to a low boil, then reduce heat to low and simmer for 45 minutes, stirring occasionally.
