Bean Veggie Burgers

Introduction

These burgers are great to have on hand frozen for a quick lunch. This is great for an experienced cook who wants to have something healthy onhand. I love to take these to work along with a whole wheat bun for a healthy lunch that satisfies. Very inexpensive to make and keep onhand. Ingredients

    1 can fat free refried beans
    1 cup brown rice, cooked
    1 egg plus one egg white
    1 onion, chopped fine
    2 tbsp ground Flax seed
    1 tbsp Cumin, ground
    1 tsp salt (or to taste)
    1 tsp red pepper flakes (or to taste)
    2 slices whole wheat bread, crumbled to small pieces (can be dried crumbs)
    Olive oil for pan frying

Directions

Makes 8 patties
1. Mix cooked brown rice, fat free refried beans, chopped onion, ground flax seed, egg, cumin, red pepper flakes, and salt. Mix. Add bread crumbs until mixture is able to be formed into patties.

2. Using a nonstick pan, panfry patties carefully (they will crumble if handled too much) in olive oil.

3. When patties are browned, carefully remove from pan and put on plate to cool.

4. Freeze in a single layer on cookie sheet and wrap individually. Store in freezer.

When you want a veggie burger. Thaw or warm in microwave for a minute or two.
