Introduction

A simple version with only onions, but you can use leeks in place of up to 2/3 of the onion in the recipe for a more traditional version. A simple version with only onions, but you can use leeks in place of up to 2/3 of the onion in the recipe for a more traditional version.
Number of Servings: 4

Ingredients

    3 C. Dices potato
    2 C. chopped sweet onion (or leek and onion to make 2 cups)
    2 C. Vegetable stock
    2 C. 1% Milk
    2 Tbs Smart Balance Buttery Spread

Directions

Saute onion in Smart Balance until soft. Add potato and vegetable stock and simmer for 20-30 minutes until potato is soft. Use an immersion blender to blend until smooth. Add Milk. Add salt and pepper to taste.

Serving Size: Makes 4 2 cup servings
