Chicken Vegetable Soup 2 pts

Ingredients

    2 stalks Celery
    1/2 cup chopped onion
    2 medium Potatoes
    1/2 to 1 cup chopped carrots
    1 box (large) Campbell's low sodium chicken broth,
    1/2 cup pearled barley
    1 tbsp Salt,
    Pepper to taste
    1 tbsp Olive Oil
    parsley

Directions

Place oil in pot. Stir in onions, carrots, celery an potatoes. Saute until onions are clear. Add the Chicken Broth, (you can add a small box of broth and water if you prefer) add barley and simmer over low heat for approximately 2 hrs or until barley and vegetables are tender.

Add parsley and serve.
