Grilled Polenta and Veggies Serves 4

Ingredients

    Mozzarella Cheese, part skim milk, 8 oz
    Oranges, 1 large (3-1/16" dia)
    Broccoli, fresh, 2 cup, chopped
    Portabella Mushrooms, 4
    Red Ripe Tomatoes, 1 large whole (3" dia)
    Radicchio, 2 cup, shredded
    Fennel, 1 bulb
    Extra Virgin Olive Oil, 4 tbsp
    polenta, ancient harvest quinoa, 5 serving

Directions

Prepare grill for indirect heat. Mix olive oil, herbs, coriander, teaspoon pepper and handful of fennel fronds in small bowl. Brush fennel wedges and broccoli with herb oil and season with salt. Cook on cooler side of grill, turning once, until marked and tender, 15 to 20 minutes. Remove to platter. Brush oranges, tomatoes, mushroom and radicchio with herb oil and season with salt. Grill over direct heat, turning once, until marked and tender, 10 to 15 minutes. Add to platter. Brush polenta and cheese with herb oil and grill over direct heat, turning once, until marked, 5 to 10 minutes. Add to platter. Season with salt and drizzle with any remaining herb oil.
