Introduction

Simple, fast and refreshing salad made from cucumbers, grated onion and ranch dressing. My mom made this weekly in summer while I was growing up, I have made a few changes by reducing the amount of ranch she used and adding some reduced fat sour cream, and also adding fresh dill when I have on hand. Ingredients

    2 large cucumbers
    1 small onion
    1/4 cup light ranch dressing
    1/4 light sour cream
    Black pepper to taste
    Dill (fresh or dried to taste), optional

Directions

1) Peel and slice cucumbers, place in salad bowl
2) Grate entire onion into bowl with cucmubers
3) Add Ranch dressing, sour cream, black pepper and dill, mix and serve.

Serving Size: Makes about 6 1/2 cup servings
