Tammy’s 100% Whole Wheat Bread

Ingredients

    1 c. room temperature water
    1 Tbs plain, full fat yogurt
    1 tsp. salt
    2 Tbs. softened butter or coconut oil (not melted)
    3 Tbs. honey
    a sprinkle of ground ginger
    Juice from 1/4 lemon
    3.25 c. whole wheat flour
    2 tsp. instant active dry SAF yeast

Directions

Sift the flour before measuring. Then mix all ingredients together. I use my Kitchen Aid mixer with dough hook (and usually double the batch).

If you use the mixer then once the dough comes together let it knead for about 20 minutes and check for the windowpane effect.

Once you get a decent windowpane then take out the dough hook and move the bowl to a nice warm (~75-80 degrees, not hot) area to rise for about an hour.

When doubled, punch it down and shape into a loaf, put it into a buttered pan and let it rise again for another 30min to an hour.

Preheat your oven to 350 degrees F.

Bake the dough for 30-35 minutes until the internal temperature is 200F.
