Southwest oven fried chicken tenders

Introduction

Crunchy chicken breast fingers with a very hot, spicy coating. Low in fat and salt free but very tasty. You can decrease the heat by decreasing the seasoning to suit your taste. Ingredients

    1/2 c. cornflake crumbs
    1/2 c. Heart Smart Bisquick
    3 tablespoons Mrs. Dash Southwest Chipotle seasoning
    1 1/2 lbs skinless, boneless chicken breasts
    fat free buttermilk

Directions

1. Set oven to 375 degrees.
2. Slice the chicken breasts into fingers as close in thickness as possible for even cooking.
3. Soak the chicken fingers in enough buttermilk to cover all the meat for 5 to 10 minutes. Use a shallow dish or bowl.
4. Put the cornflake crumbs, bisquick and seasoning into a large ziploc bag and mix well.
5. Coat a large cookie sheet with cooking spray, or line with parchment paper for easier clean-up.
6. Take a few of the chicken fingers out of the buttermilk, drop them in the crumb mixture and shake to coat them. Lay the coated chicken on the cookie sheet. Repeat with the rest of the chncken. Discard the buttermilk.
7. Bake the chicken fingers for 40 to 50 minutes or until the meat is 170 degrees F.


Adjust the seasonings down to one or two tablespoons if you are not a really hot and spicy person, or substitute another flavor of seasing for milder flavor for young children, such as italian seasoning or regular Mrs. Dash.

This makes three or four adult servings and is very easy to make.
