Introduction

Number of Servings: 6

Ingredients

    1 cup water
    1 envelope of Herb Ox salt free Chicken seasoning and broth mix
    3/4 cup dry couscous
    1/2 cup dried cranberries
    1/2 cup chopped celery
    1/2 cup shredded carrot
    1/4 cup chopped red onion
    1/4 cup pine nuts, toasted

    Dressing:
    3 Tbsp. red wine vinegar
    1 tbsp. olive oil
    1 tbsp. dijon mustard
    1/4 tsp. salt
    1/4 tsp. pepper

Directions

Bring water to a boil in a small saucepan. Stir in couscous; cover and remove from heat. Let stand 5 minutes. Fluff with a fork; cool.
In a serving bowl, combine the couscous, cranberries, celery, carrot, onion and pine nuts.
In a small container with a lid, combine oil, vinegar, mustard, salt and pepper. Shake well, pour over the couscous mixture and toss to coat. Serve at room temperature or chilled.
