This sounds like a lot of prep work, but it's not...basically, it's a salad with shrimp, sesame and lemon zest, with a vinagrette...makes a really good summer supper...all ingredients should be organic, especially the lemon zest! Ingredients

    7 Wild Tiger Prawns, peeled, deveined and blanched
    4 Mediterranean Organic Mixed Olives
    .5 peeled Cucumber
    .25 of a medium red bell pepper, diced
    .25 of a medium Daikon radish, thinly sliced
    6 Cherry tomatoes, halved
    2 cups Hearts of Romaine
    2 tsps Lemon Zest
    2 tsps toasted, unhulled sesame seeds
    1 cup Arugula
    1 Jalapeno pepper, seeds removed and sliced thinly
    1 Celery Stalk, sliced

    Basic Vinagrette to taste

Directions

Toss all ingredients into a salad bowl and enjoy!
