This recipe makes a yummy quick lunch or dinner...especially when left over...Bragg's Aminos are a great way to perk up a dish, without using salt...it does have sodium though, as it's soy (non GMO) protein, so try not to use more than .5 tsp... Ingredients

    1lb package organic boneless, skinless chicken breasts (3 breasts); sliced lengthwise to yield 6 2 oz cutlets
    1 package white mushrooms, cleaned and sliced
    1 medium onion, sliced
    6 sprigs fresh rosemary (fresh is better than dried for this dish, but dried will do in a pinch, just add to taste)
    3 tbsps extra virgin olive oil
    3 cups Arugula
    1.5 cups water, white wine, or organic stock
    Ground black pepper to taste


Directions

In a large skillet, caramelize onions and mushrooms in 1.5 tbsps of olive oil; when done, remove from pan and set aside;
Brown chicken in remainder of olive oil; when cooked, set aside;
Deglaze pan 1.5 cups of water/wine/stock; add rosemary sprigs and stir until reduced to au jus;
Return chicken, onions and mushrooms to pan, season with black pepper to taste.
Serve with arugula

Serving Size: Makes aprox 6 3 oz servings
