Peppered Tilapia w/ Tropical Salsa

Introduction

Very tasty recipe that was sent to me through mealtimemakeover.com. Feel free to change up the spices that season the fish. I have used cayenne, paprika, garlic, and onion powder. Number of Servings: 4

Ingredients

    1 can tropical fruit salad, drained
    6-8 grape tomatoes, cut in halves
    2 tbsp fresh cilantro, chopped finely
    1/2 tbsp red wine vinegar
    1 tsp olive oil
    Dash salt and pepper
    12-16 oz tilapia filets
    1 tbsp seasoned pepper blend
    cooking spray

Directions

Cut fruit into small pieces. Add grape tomotoes, cilantro, and fruit into small bowl. Stir in oil, red wine vinegar, salt, and pepper. Refrigerate until served.

Heat large saute pan on medium-high. Season both sides of tilapia with seasoned pepper. Spray pan with cooking spray. Cook fish 2-3 min per side or until it flakes easily with a fork.

Top with salsa and serve.

Serving Size: 4 servings of fish w/ salsa
