Summer Salad

Ingredients

    1 small red onion, sliced thinly
    5 medium tomatoes cut in wedges
    1 cucumber, peeled if thick skinned, cut in half and then sliced 1/4 inch thick
    1 yellow pepper, cut into chunks
    2 oz feta, crumbled
    2 oz fresh pecorino, cubed
    Fresh ground pepper
    6 tablespoons extra virgin olive oil
    2 tablespoons red wine vinegar
    2 tablespoons of chopped fresh mint and oregano
    12 Kalamata olives


Directions

Toss together the onion, tomatoes, cucumber, and bell pepper. Add the cheese and toss again. Add the oil, the vinegar, the herbs, and toss again. Taste, and add the olives. Serve.
