Cold Quinoa Salad

Number of Servings: 4

Ingredients

    Extra Light Olive Oil, 1 tbsp
    Cranberries, dried, (craisins), 2 Tbsp
    Almonds, slivered, 2 Tbsp
    Red Onion, raw, 1 tbsp chopped
    Lemon Juice, .75 fl oz
    Cider Vinegar, 2 tbsp
    Quinoa, 3/4 C dried
    Mint, 5 leaves
    Pinch of salt and pepper

Directions

Prepare the quinoa by package instructions. Dice up onions and cranberries, and julienne mint. Combine all ingredients, stir together and chill in fridge until cold all the way through. Enjoy!
