Introduction

Very simple pasta - just mix up raw ingredients with cooked pasta Very simple pasta - just mix up raw ingredients with cooked pasta
Number of Servings: 4

Ingredients

    8 oz pasta (rotini work well)
    1 bag baby spinach
    4 medium tomatoes, diced
    1 Tbsp olive oil
    1/2 tsp salt
    1/4 tsp pepper
    1 clove garlic, minced
    2 oz proscuitto, diced
    1/2 c grated parmesan

Directions

Cook pasta to taste. While pasta is boiling: mix tomatoes, oil, salt & pepper, garlic & proscuitto. Add baby spinach to colander. Pour cooked pasta over spinach to drain - spinach will wilt. Combine with tomato mixture. Top with parmesan.

Serving Size: Makes 4 1.5c servings
