2 cup brown sugar, firmly packed
2 teaspoon vanilla
2 cup canned pumpkin
2 teaspoon baking soda
1 cup unsweetened applesauce
2 teaspoon baking powder
1 teaspoon cinnamon
1 tsp nutmeg
1/2 teaspoon ginger
4 cup all-purpose flour
Sift together dry ingredients. Stir into the pumpkin mixture until smooth.
Drop by spoonfuls or oiled baking sheet, and bake at 350Â°F for 15-18 minutes.
