Introduction

A cold soup for a hot day. So easy and refreshing. I had this at a Bistro and had to come up with the recipe. Easy to change up herbs and spices to suit your taste. A cold soup for a hot day. Ingredients

    3 cups mango frozen works
    2 cucumbers peeled and deseeded
    juice of 1 lemon
    juice of half lime
    1 red onion
    garlic 2 cloves
    fresh parsley
    fresh basil
    2 T olive oil
    chili to taste
    Mango Nectar - I used RW Knudsen's Organic same calorie count as Dole

Directions

Put it all in a Food Processor and pulse until desired consistancy. A little chunky is how I like it. You can add more or less mango nectar to suit your taste. Refridgerate and let flavors blend and serve cold.
