Banana Walnut Oatmeal

Ingredients

    1/4 cup vanilla soy milk
    1 cup water
    1/2 cup quick-cooking oats
    1/2 large banana, peeled and mashed (about 1/2 cup)
    1/2 Tbsp sugar-free maple syrup
    1 Tbsp vanilla protein powder
    1/2 tsp ground cinnamon
    1/4 tsp ground nutmeg
    1/2 Tbsp toasted walnuts


Directions

1. In a medium saucepan over medium heat, heat soy milk and water for 5 minutes or until almost boiling.
2. Add oats and cook, stirring, for about 1 or 2 minutes or until creamy.
3. Remove from heat and stir in mashed banana, maple syrup, protein powder, cinnamon, and nutmeg.
4. Pour into a serving bowl, top with walnuts, and serve.

Serving Size: make 1/2 cup serving
