Vanilla "Cheesecake" - 17 DD Cycle 1

Introduction

This is a baked "cremeŽ" made with cottage cheese. I suggest using the "no salt added" cottage cheese. This is a baked "cremeŽ" made with cottage cheese. I suggest using the "no salt added" cottage cheese.
Number of Servings: 2

Ingredients

    1 cup 1% cottage cheese (no salt added)
    1 fresh egg
    1 tsp. pure vanilla extract
    1/2 tsp. lemon juice
    2 tsp. stevia extract (more if you like it sweeter)

Directions

Heat oven to 350. Blend all ingredients in blender on high speed until very creamy. Pour into two ramekins. Bake 20 minutes or until set.

This is very cheesy and not sweet at all. I think the stevia loses sweetness when baking. I suggest adding chopped berries on top for a great dessert.

Serving Size: makes 2 servings in small dish or ramekins
