Light chili that has a broth base rather than a tomato base.Can also be made as a meat free soup by leaving out the chicken...replace chicken stock with vegetable stock and add some frozen spinach. Light chili that has a broth base rather than a tomato base.

Ingredients

Chicken Broth
Salsa Verde (not added into recipe calories yet)
Rotel Tomatoes
Shredded Chicken Breast (rotisserie is a huge timesaver)
White Beans (Great Northern, Pinto, Cannelini)
Corn Fresh or Frozen)
Garlic
SM. Onion
oregano
Cumin
Directions
Shred the rotisserie chicken breast. In a pan, saute the onion and garlic in a little of the chicken or vegetable stock. Once softened, add the remainder of the stock, the rotel tomatoes, the salsa verde, white beans, corn and salt & pepper to taste. Let simmer for about 15 minutes and stir in chicken...simmer until chicken is heated through.
Serve with reduced fat sour cream, reduced fat mexican 4 cheese, extra salsa or tomatoes, avocado or tortilla strips. Remember to count the extra calories for any additions you make.
