White Chicken Chili

Introduction

Light chili that has a broth base rather than a tomato base.

Can also be made as a meat free soup by leaving out the chicken...replace chicken stock with vegetable stock and add some frozen spinach.

Ingredients

    Chicken Broth
    Salsa Verde (not added into recipe calories yet)
    Rotel Tomatoes
    Shredded Chicken Breast (rotisserie is a huge timesaver)
    White Beans (Great Northern, Pinto, Cannelini)
    Corn Fresh or Frozen)
    Garlic
    SM. Onion
    oregano
    Cumin


Directions

Shred the rotisserie chicken breast. In a pan, saute the onion and garlic in a little of the chicken or vegetable stock. Once softened, add the remainder of the stock, the rotel tomatoes, the salsa verde, white beans, corn and salt & pepper to taste. Let simmer for about 15 minutes and stir in chicken...simmer until chicken is heated through.

Serve with reduced fat sour cream, reduced fat mexican 4 cheese, extra salsa or tomatoes, avocado or tortilla strips. Remember to count the extra calories for any additions you make.
