Cucumber Mint Soup

Number of Servings: 4

Ingredients

    2 english cucumbers peeled and de seeded
    3 scallions chopped
    1 clove garlic chopped
    1.5 cup fat free plain yogurt
    .5 cup low fat sour cream
    1/3 cup fresh mint leaves coarsly chopped
    1/4 cup fresh parsley coarsly chopped
    Salt and pepper to taste
    I used 1/4 tsp seasalt

Directions

put all ingrediences in a blender and puree until smooth.
Transfer to a bowl,cover and chill for at least 2 hours.
serve with a sprig of fresh mint.

Serving Size: makes 4 7oz serv's
