Introduction

A light Marinated Italian Salad. This is Zone balanced for a complete meal or snack. Microwave the broccoli, cauliflower and carrots for three minutes or so depending on your preference and blanch in ice water to maintain crispness.

Mix all ingredients and let marinate in refrigerator for several hours.

Ingredients

    Garlic powder, 1 tsp
    Oregano, ground, 1 tsp
    Parsley, dried, 1 tsp
    Cider Vinegar, 4 tbsp
    Black Olives, 10 jumbo
    Broccoli, fresh, 6 spear (about 5" long)
    Carrots, raw, 1 cup, strips or slices
    Cauliflower, raw, 15 floweret
    Onions, raw, 2 tbsp chopped
    Extra Light Olive Oil, 0.33 tbsp
    Truvia Natural Sweetener, 1 serving

Directions

Microwave Broccoli, cauliflower and carrots, separately for 2-3 minutes on high, blanching each batch in icy water to cool. Drain and place in bowl. Slice green onion (could use leeks) into bowl with vegetables. Sprinkle on oregano, parsley, garlic powder and truvia. Pour on cider vinegar. You may prefer more or to mix it with olive oil first. I spritz the olive oil on the ingredients with my Misto sprayer. Makes 4 1-cup servings.
