1/4 cup flour
1/2 tsp. salt
1/4 tsp. ground black pepper
1/2 tsp. oregano
4 skinless, boneless chicken breast halves
4 tbsp. butter
1 tbsp. olive oil
1 cup (small can) sliced mushrooms
1 cup marsala wine
2 cups rice, cooked
2. In a shallow bowl or gallon baggie, mix flour, salt, pepper & oregano. Coat chicken with flour mixture.
3. In a large skillet, melt butter in olive oil over medium heat. Place chicken in pan & brown lightly on each side. Add mushrooms.
4. Pour in wine. Cover skillet & simmer for 10 minutes; turn chicken one more time.
5. Serve over rice.
