Green Beans and Tomatoes

Introduction

Ingredients

    3 strips center cut bacon, chopped
    3 cloves garlic
    3/4 cup chopped onion
    3/4 cup chopped celery
    4-5 cups fresh or frozen green beans in 1 inch pieces
    1 1/4 cups peeled and chopped tomatoes
    3/4 cup cherry tomatoes, halved
    Salt and pepper or other seasoning mix to taste

Directions

Chop bacon in 1/2 inch pieces heat in medium sauce pan over medium heat until about half cooked, and fat starts to render. Stir in garlic, onion and celery and cook until onions and celery begins to soften. Rinse green beans and drain, stir into onion mixture. Season with salt and pepper, and stir to coat with rendered bacon fat. Continue to cook, stirring occasionally, for about 5 minutes until beans are heated through and beginning to soften. Add tomatoes, cover and simmer for 5-10 minutes until beans are cooked through. Season to taste.

Serving Size: Six 1/2 cup servings
